Prerequisite Programs


Prerequisite programs such as Good Manufacturing Practices (GMPs), Standard Operating Procedures (SOPs) and Sanitation Standard Operation Procedures (SSOPs) are the foundation by which a food safety plan is built. These documents detail the step-by-step information needed to perform all tasks within a plant and are often referred to in a Hazard Analysis when determining Critical Control Points.

A well-written SOP should contain the following information:

  • Purpose & frequency of the task
  • Who will perform the task
  • Describe all the steps needed to perform the task

A well-written SSOP should contain the following information:

  • Pre-operation Sanitation
  • Operational Sanitation
  • Implementation
  • Monitoring
  • Corrective Actions
